Planning your holiday get-together? Take the number of guests you’re expecting and allow for ½ to ¾ of a pound of meat per person. This guideline will help you have enough for everyone or strategize so you have plenty of leftovers.

Leave nothing to chance. A trusty instant-read food thermometer will help you get a well-cooked roast with less guesswork. Taking out meat 5-10 degrees early can help ensure nothing goes overcooked. If it is a bit rare for your taste, dipping in Au Jus can help finish the cooking process.

Make the most of your selection. Both boneless and bone-in options can make great holiday roasts. But if you’re choosing to keep the bone-in, there are some special considerations. While the bone can enhance flavor, remember that it also retains heat. Taking a bone-in roast out of the oven a few minutes early will make sure it doesn’t overcook.
